Preparation
Taking his inspiration from Eiswein (ice wine), which is made by allowing the grapes to freeze on the vine before being cold-pressed and fermented at low temperatures, Jaume Gramona decided to make a wine with similar characteristics yet without the grapes freezing in the months before harvest. The only natural way of even further concentrating this must after a late harvest was by partially freezing it, which entailed total oenological control over the process using techniques known as ‘supraextraction’ and ‘cryoextraction’ in cold chambers.
To do so, a yeast with an accentuated plasmolysis effect, especially selected by the University of Bordeaux, was used. The result is a highly concentrated, fruity wine that is both sweet and tart, endowing it with fluidity and character, ageing capacity and excellent possibilities for in-bottle evolution.

Serving tips
When and with what you drink this wine depends on what point of evolution it has reached when you open the bottle. While still young, it is perfect for early evening drinking with no other accompaniment than good company, the sunshine and a warm garden breeze. As a dessert wine, it makes the perfect partner to fruit salads, truffles or chocolate pralines. With the added complexity of ageing, it is ideal with strong cheeses, fresh foie and oysters. And as it evolves, it can be served with cooked dishes. The longer it is laid down, the more complex it becomes, and for this reason it is bottled in thick, dark glass.
Sensory analysis:
Sight: pale yellow with greenish-yellow tones.
Smell: Notes of citrus and exotic fruits, lychees, loquats and apricot. Delicate floral perfume of orange blossom and rosewater that evolves towards the hydrocarbon nuances typical of this grape variety.
Taste: As a sweet wine, it stands out for its great fluidity with a surprisingly well-integrated sharpness. Silky, unctuous and meaty glycerine taste with a marked fruit presence: a harmonious blend that makes it highly drinkable.
