Grilled vegetables are a traditional dish of Catalan cuisine. It is made with peppers, aubergines, onions and sometimes grilled and peeled potatoes or salted cod. Grilled vegetables are eaten without anything else, as starter, sometimes accompanied by cold meat or anchovies. It can also accompany a main dish of meat or dress a cake.
This culinary technique consists in roast entire vegetables directly over coals or embers, peel them, remove the seeds, cut them into strips and dress them.
