It is exclusively obtained from olives of the region of the Empordà, where there are old olive trees that are the basis of their production. There are two varieties of olive trees that are only found in the Empordà region, argudell and corivell, which, together with the climate characteristic feature of the region, the North wind, that affects crops, give the product a distinctive character. It has a maximum acidity grade of 0.1 degrees.
