• Medium-sized calibre with a horseshoe shape. It has a rosy tonality, typical of the lean meat with no oxidisation.

Taste and aroma:
• Peppered salt in its exact measure, we get an elegant and homogenous taste, with a wood aromas background.
• When it is cooked, it remains entire, without shredding, in order to notice the sweetness.

• A good choice as a main dish or in combination with other ingredients in a more elaborate recipe.
• Combined with all kinds of vegetables, even fruits.
• Barbecued cooking with mongetes del ganxet or with a mixture of mushrooms.
• Decorated with pieces of apple and chopped green onion, we can combine it with a white wine from Penedès.
• We can also combine it with a reserve wine of the Empordà or other full-bodied red wines, like Cabernet Sauvignon, Merlot or Ull de llebre from Empordà or Conca de Barberà.
