Sinols is a Norman origin lineage of the 10th century. It defines the mountains of Roses as the buttress in the massif of Cap de Creus, from where you can contemplate the vineyards.

Taste: it flaunts morning transparencies, of a fresh yellow with slight green tonalities. It smells neat, clean and fruity, such as pear, apple, banana and green peach. It has memories of a distant sweetness and a pungent, luscious and enjoyable flavour. It also has a measured acidity that makes it persistent and delicious. Its taste and aftertaste agree with the sensations of the first tasting.

Gastronomy: it harmonizes perfectly with fish and seafood, cold creams, smoked fish, white meats, fresh and semi-cured cheese. It is ideal at any time of the day.

Elaboration: white garnacha and macabeu that come from low yield vineyards (55 hl/ha). When the maturity of the grape is optimal grape the wine harvest is by hand. Once pressed, the grape-juice flower is chosen and is fermented at a controlled temperature (16ºC).
