Sinols is a Norman origin linage of the 10th century. It defines the mountains of Roses as the buttress in the massif of Cap de Creus, from where you can contemplate the vineyards.

Taste: it has a reddish sky colour, pale and attractive red. It smells a subtle aroma of red fruit (wild strawberries and cherries). It has a warm and intense flavour. Thanks to the maceration of the mature grapes, it has a full, dense, pleasant and persistent ending.

Gastronomy: it perfectly accompanies dishes of rice, vegetables, legumes, pasta, hors d'oeuvres, white meats and fresh and semi-cured cheeses. However, due to its strong personality, it also convinces with traditional Mediterranean dishes, usually reserved for red wines.

Production: harmonic combination of the garnatxa (40%) and carinyena (30%) varieties, with small proportions of Cabernet Sauvignon, Sirà, Merlot and Ull de llebre, all prepared separately. The wine harvest lasts the whole month of September, collecting each variety when it reaches phenolic ripening. Grapes are macerated in cold at least 48 hours. Then, depending on the taste, the grapefruit flower is bled. Alcoholic fermentation lasts approximately 21 days after at a temperature of 16 °C.
