Sinols is a Norman origin linage of the 10th century. It defines the mountains of Roses as the buttress in the massif of Cap de Creus, from where you can contemplate the vineyards.
Taste: it is a consistent, dense wine, which denotes the firmness of the vineyard. It has an intense red colour with purple and blue tonalities. It has a poweful aroma of fruits and spices: blackberry, plum, coconut, vanilla, liquorice... It also has memories of menthol, toffee. It tastes full and round, with pleasant tannins. It has a full, dense, tasty and persistent ending.
Gastronomy: it is ideal to accompany meat and stove dishes, casseroles, blue fish, sea urchins and semi-cured cheeses.
Production: garnacha and carinyena are the two majority varieties in the elaboration of this Sinols, which also incorporates a small proportion of Sirà and Merlot. The wine harvest is during the ninth month of the year, when each variety reaches phenolic ripening. They disshape the grape, after it is macerated and fermented in a temperature of 28° C for 15 days. Then, it is started the malolactic fermentation.
